Ingredients

  1. For Kala Chana Masala -
  2. 1 cupblack chickpeas (soaked overnight) 1 cup tomato puree
  3. 2-3bay leaves
  4. 1 tablespoonroasted chickpea flour (besan)
  5. 1/2 teaspoonpav bhaji masala powder
  6. 1/2 teaspoonturmeric powder
  7. 1/2 teaspoonred chili powder
  8. 1/2 teaspoondried mango powder (amchur)
  9. 1/2 teaspooncumin seeds
  10. 1 tablespoongreen chili and ginger paste
  11. Salt to taste
  12. 2 cupswater (about 480 ml)
  13. 1/4 teaspoonKashmiri red chili powder
  14. 1/4 teaspoongaram masala powder
  15. 1 tablespoonfinely chopped cilantro
  16. 2 tablespoonsoil

Cooking Instructions

    Pressure cook the soaked black chickpeas with 1 cup water and salt for 5-6 whistles until tender.

    Heat oil in a large skillet. Add bay leaves and sauté, then add cumin seeds. When the cumin starts to crackle, add the green chili and ginger paste and sauté.

    Add all the spices except dried mango powder and garam masala powder. Sauté well.

    Add the tomato puree and cook, stirring, until the oil separates. Add the roasted chickpea flour and cook for 2 more minutes.

    Add the cooked black chickpeas and mix well. Sauté for 3-4 minutes, adding water as needed. Add salt, cook on high heat for 2 minutes, then cover and cook for another 5-6 minutes.

    Add garam masala powder and dried mango powder, mix well, and cook on low heat for 2 minutes. Turn off the heat.

    Kala Chana Masala is ready. Garnish with chopped cilantro and serve hot with paneer-stuffed butter naan.

    Tips:
    You can also use onion and garlic if desired.
