Spanish Potato Omelette with Onion and Peppers

This is my signature dish. I don't consider myself a great cook, but my tortillas always turn out delicious. They're a must-have at every family and friends gathering.

This is my signature dish. I don't consider myself a great cook, but my tortillas always turn out delicious. They're a must-have at every family and friends gathering.
Cooking Instructions

Peel and slice the onion into thin rounds.

Cut the onion into thin strips and chop the peppers into small pieces.

Heat plenty of oil in a pan. When it's hot, reduce to medium heat and add the potatoes and vegetables together.

While the mixture is frying, take a moment to enjoy an appetizer. Cooking should be fun!

Beat 7 eggs and set aside.

After stirring several times, when you can easily pierce the potatoes with a fork, the mixture is ready.

Drain well.

Add the mixture to the beaten eggs, mix everything together, and add salt. I always add the salt at this point and taste it.

Heat your tortilla (omelette) pan on the stove. If you have a dedicated pan for tortillas, use it. Add a little oil, and when it's hot, pour out any excess and add the mixture.

Flip the tortilla a few times, depending on how set you want it. In summer, I usually cook it a bit more. And that's it!
