Vankaaya senagapappu fry is quite famous in Andhra. simple to make and yummy to eat. brinjal being the king of vegetables, people prefer to include it in the menu during special occasions. let it be Bhagara Baingan, called guththi vankaaya in Andhra or this vankaaya Senagapappu. senagapappu is replaced with soaked dry peas for Vankaaya Bataani .

Ingredients

  1. 500 gmsBrinjal(purple coloured ones)
  2. 1/2 cupchanadal
  3. 1Big onion
  4. 5,6Green Chillies
  5. to tasteSalt
  6. as neededChilli powder
  7. 1 tspGaram masala
  8. 1 1/2 tspginger garlic paste
  9. 2 tbspoil
  10. 1 tspmustard
  11. 1 tspjeera /cumin powder
  12. 1 pinchhing /asafoetida
  13. 1handfulcurry leaves
  14. as neededCoriander for garnish(optional)

Cooking Instructions

    Soak chana daal in the night or at least 4 hrs before making the curry

    Slice brinjal vertically and put the slices in water(Salt added) as soon as they are cut

    Slice onion and chillies also vertically

  4. 4

    Heat oil in a kadaai and add mustard,jeera and hing

  5. 5

    Put sliced onion and chillies... saute well

  6. 6

    Add curry leaves

    Once onion changes colour, add ginger garlic paste. Mix well. Let it fry for two mins so that the raw smell is gone

    Now, add sliced brinjal and mix well. Let it sautee for 3-4mins

    Add soaked chana Dal. Mix well

    Now, add salt as required. Mix well

    Cook with a lid on for 10-12mins. No need to add water

    Now that brinjal and dal are cooked completely, add chilli powder. Mix well

    Add garam masala. Mix well and take off the stove

    Serve with hot rice or roti
