After years of missing out on pancake day i finally made an adaption my husband loves and can have when the rest of the family have regular pancakes.
Steps

Note: Dietary status is a guideline only. If you have a food allergy, please check the suitability of your ingredients.

Add the GF flour, coconut dream and egg to a bowl and mix/whisk until evenly mixed.

Add a small amount of oil to a frying pan and bring to heat.
- 4
Add some of the mixture (i use a ladel) to the frying pan and cook on the one side then flip/toss and cook on otherside until golden brown.

Serve as desired. My family like these with maple syrup or sqeeze an orange onto the pancake and a sprinkle of sugar.
