Lamb Stew in a Slow Cooker

My anniversary gift finally arrived! I was so excited—I’d been wanting a slow cooker for a year or more. I just had to try it out, and of course, I’m sharing it here to help all you slow cooker fans or anyone curious about them. I have tons of recipe ideas (and plenty I’ve read about), so as I make them, I’ll post them here. The result is SPECTACULAR. I knew it would be good, but I didn’t expect it to be THIS good. If you’re wondering whether to get one, I definitely recommend it. You just set it and forget it (which is great for those of us who are always multitasking, haha). Hope you enjoy it!

Note: I’ve seen that some people sauté the vegetables in a pan before adding them to the slow cooker with the meat, but I wanted to try putting everything in raw to see if it really works—and it does! Another plus for the slow cooker.

First, prepare the vegetables. Peel and cut the carrot into pieces.

Peel and cut the potatoes into wedges.

Peel the onion and slice it thinly. Wash and slice the bell pepper. Cut the leek and celery into small pieces as well.

Place all the vegetables in the bottom of the slow cooker and add a pinch of salt.

Add the lamb and a generous drizzle of extra virgin olive oil.

Pour in the red wine and add the unpeeled garlic cloves (this gives a great flavor!).

Sprinkle with thyme, pepper, and garlic powder. Cover the slow cooker and cook on HIGH for 4 hours.

Now you can go about your day while it cooks!

After that time, let it rest for about 30 minutes with the slow cooker turned off and covered. It’s ready!
