Sauerkraut can be very assertive but when cooked with other ingredients, especially meats the assertiveness tones down greatly. It becomes like the cabbage it once was with a little extra flavor. I hope you give it a try.

Sauerkraut can be very assertive but when cooked with other ingredients, especially meats the assertiveness tones down greatly. It becomes like the cabbage it once was with a little extra flavor. I hope you give it a try.

Dice the onion. Slice the bacon. Wash the apples peel and dice into bite sized pieces.

Sauté the bacon in a pan.

When it starts to render add the onion.

When the onion is translucent add the ground sirloin and vinegar. Season with the salt, pepper, garlic, and smoked paprika.

Brown the sirloin. When mostly browned add the sauerkraut and cover, this will produce more juices.

Stir well then add the apples and mix well.

Slice the hotdogs.

When the sirloin and sauerkraut has simmered for 12 minutes. Add the hotdogs.

Simmer for 12 minutes covered.

Let rest 7 minutes covered and serve.
