Ingredients

  • 2.2 lbsMaseca (corn masa flour)
  • 2 cupsoil (about 1/2 liter)
  • 4 earscorn, kernels removed, or 1 large can of corn
  • 7carrots, grated
  • 7zucchini, grated
  • leavesCorn husks or banana
  • Spinach or Swiss chard, to taste
  • If you have chicken broth, use it to mix the dough; if not, use water
  • Salt, to taste
  • 1.3 lbsChihuahua cheese (about 600 grams)
  • Thick salsa (spicy and thick enough so it doesn't leak out of the tamale)

Steps

  1. 1

    Mix the Maseca with chicken broth or water until combined.

  2. 2

    Add the spinach or Swiss chard, grated carrots, grated zucchini, corn, and oil. The dough should have more vegetables than anything else.

  3. 3

    Place one or two heaping tablespoons of the mixture onto a corn husk or banana leaf, spread it slightly, then add cheese and salsa in the center. Close the husk or leaf so the tamale holds together in one piece.

  4. 4

    Steam until fully cooked.
