Steps

Soaked urad dal for 2 hrs.

Drain dal completlely.add it in blender along with ginger green chilli cumin seeds asafoetida

Blend it coarsely then add littel water add grind again

Keep blending untill smooth

Transfer in bowl.add salt as par taste.mix well

Heat oil in pan.

Drop a small amount of dal batter woth greased spoon or hand

Kerp stirring and frying till vadas turn to browned.

Drain them on a kitchen tissue first.

Transfer to the water while they are still hot. Rest them for 20 mins

Beat dahi/ yogurt until smooth. You can also add a tbsp of powdered sugar and little salt to

Pour dahi over vadas generously. Allow them to rest for at least 15 mins and this is optional.

Just before serving top the dahi vada with a generous amounts of shev and sweet tamarind chutney.

Serve immediately.
