Ingredients

  1. 2 tbspsesame oil
  2. 2 tbspsesame seeds
  3. 225 gcooked long grain rice
  4. 5 cmpiece of cucumber finely grated
  5. 1 teaspoonfinely grated lemon rind
  6. Squeezelemon juice
  7. 6eggs
  8. 1 tbspdry sherry
  9. 1 tbsplight soy sauce
  10. Pinchcaster sugar
  11. 220programs cooked peeled prawns
  12. For spring onions finely chopped
  13. During large tomatoes seeded and chopped
  14. 2 tbspvegetable oil
  15. to tasteSalt and black pepper
  16. For cooked prawns in shells and fresh coriander sprigs to garnish

Steps

  1. 1

    Heat the sesame oil in a pan and fry the sesame seeds until golden stop stir in the cooked rice, followed by the cucumber, lemon rind and juice and seasoning. Cook for 2 to 3 minutes and keep warm while making the omelettes

    Place the eggs, sherry, soy sauce, sugar and a little pepper into a bowl and beat with a fork. Stir in the peeled prawns, spring onions and tomatoes

  3. 3

    He 1/2 tbsp of the oil in a frying pan and ladle in 1/4 of the mixture. Fry over a moderate heat for 3 to 4 minutes until the omelette is lightly golden underneath. Cover and cook until the omelette is just set.

  4. 4

    Remove the lid and fold the omelette in the half garnish with prawn and fresh coriander and serve a spoonful of the rice.

  5. 5

    Then the remaining omelettes in the same way.
