In a saucepan, combine the 2 cups of water, rice, and salt. Simmer for about 10 minutes, stirring occasionally.

From the 4 1/4 cups milk, set aside 5 tablespoons in a small bowl and dissolve the cornstarch in it.

Add the remaining milk, sugar, and vanilla to the simmering rice. Lower the heat and stir often to prevent the rice pudding from sticking.

After about 15-20 minutes, add the dissolved cornstarch and stir constantly until the mixture thickens.

While still warm, divide the pudding into small bowls. Let it cool slightly before sprinkling with ground cinnamon and placing in the refrigerator.

Tip: If your child doesn't like cinnamon, decorate with jam or chocolate syrup in a smiley face or heart shape!
