Delicious, chunky, healthy soup to use up autumnal #seasonsupply veg. Forgot all about this recipe and then got a batch out of the freezer months later!
This recipe makes a lot, so put some in the freezer and enjoy it in winter as well!

Delicious, chunky, healthy soup to use up autumnal #seasonsupply veg. Forgot all about this recipe and then got a batch out of the freezer months later!

Finely chop onion, garlic and ginger. Fry for 5 minutes.

Chop squash, peppers and sweet potato into 1cm chunks.

Add all the veg to the pan. Add lentils as well. Mix thoroughly.

Add stock, chopped tomatoes and curry powder. Cook for at least 30 minutes until veg is tender (longer the better, I cooked for 45 minutes).

Serve with some nice toast and any steamed green veg you fancy.
