Ingredients

36 servings
  1. 4 cupsmashed asian yam
  2. 4 cupswarm water
  3. 1 cupsourdough starter
  4. 3 tspcumin seeds
  5. 3 tspsalt
  6. 1 tspdry yeast, optional
  7. 7 cuporganic spelt flour
  8. 1 cuporganic oat flour
  9. 10 cupsorganic AP flour

Steps

    Mix wet ingredients well in a mixer. Then add dry ingredients. One cup of flour at a time.

  2. 2

    Once the dough is well Incorporated. Divide it into 3 portion and allow them to rest in big container. Check every 2 hours.

  3. 3

    By 4th hour, remove the dough from the containers. Shape it into anything you want. Place them on a floured baking pan.

  4. 4

    Rest for another 2 hour before baking. Bake at 375F for 20-35 minutes depends on the thickness of the breads.

    Enjoy for the rest of two weeks. Good for a week in the fridge or many weeks in a freezer.

Thanks to my intolerance of all refine foods such as white flour, white rice and sugar, transition to use whole grains through sourdough fermentation, soaking and sprouting seeds has opened a whole new world to me! All my recipes share the same principle of low fat/oil, almost no added sugar/honey, whole grains and as much fermentation Incorporated as possible to unlock its nutritional value and plus lots of made ahead secret ingredients that I've learned over the years. In my pantry, you'll always found stocks of ancient grains (spelt, kamut, millet), brown rice in various varieties, jars of dry beans in multiple color and shapes. Kimchi made with all kinds of seasonal veggies in my fridge and homemade stocks in my freezer all the time. Join me on this journey eat whole 2 thrive!
