Egg Potato Balado

‘Balado’ is an Indonesian stir-fry chili sauce dish. It’s originated from Minang cuisine of Sumatra island. The ingredients are similar to Indonesian ‘sambal’ (chili sauce). But unlike ‘sambal’ which is often treated as a separate dipping condiment, ‘balado’ chili sauce is usually mixed and stir fried together with its main ingredients and treated as a dish. Ingredients

  • 6boiled eggs (more or less 10 minutes), fried until the eggs turned golden yellow
  • 500 grpotatoes, peeled, diced
  • 250 mlvegetable oil to fry the potatoes
  • 2 Tbspvegetable to sauté the ground spice
  • 6shallots, finely sliced
  • 3lime kaffir leaves, take out the bones
  • 1 tspcoconut sugar
  • salt and pepper(to taste)
  • Ground spices:
  • 4 clovesgarlic
  • 1medium tomato
  • 20red chili peppers (can be added or reduced to taste)
  • 1 tsptrasi (dried shrimp paste - explanation in my previous post. Scroll down ⬇️⬇️⬇️)

Steps

  1. 1

    Heat the vegetable oil over medium-high heat. Fry the potatoes until soft. Drain. Set aside.

  2. 2

    Heat the vegetable oil over medium-high heat. Sauté shallots until fragrant.

  3. 3

    Add ground spices and lime kaffir leaves. Keep stirring until the ground spices change color.

  4. 4

    Add salt, coconut sugar, and pepper.

  5. 5

    Add fried potatoes and fried eggs. Mix well.

  6. 6

    Serve with yellow rice or white rice!😋
