Bitter leaf soup (ofe onugbu)

This is a special delicacy where I come from (Anambra state)
It is specially prepared for every event ranging from traditional marriages to burials etc and can be served with Akpu!
It is prepared with a special ingredient known as ogili (a flavoring made from fermented oil seed and smells like cheese) oh how I love ogili☺️

Steps

Wash stock fish,debone dried fish, pound or blend pepper, crayfish and set aside

Wash bitter leaf thoroughly to remove the bitterness and dirt

Cook cocoyam until it's tender

Cook meat and stock fish with seasoning cubes and a little salt
- 5
When meat is done,add your already cleanly washed bitter leave,cocoyam and red oil, mix,cover and allow to cook for 15mins

By now the mixture has blended,add pepper and crayfish, seasoning cubes and almighty ogili, allow to cook for another 15 minutes so that all ingredients can blend well

Turn down heat and serve with Akpu,pounded yam or any other swallow of choice
