Sauté the vegan chicken in a pot with a little bit of oil. Cook for a little bit. Add thyme and dried basil along with salt & pepper.

Add in the onion, celery, and carrot. Cook for 5 minutes then add the minced garlic.

Add the veggie stock along with the tofu and noodles. Stir a little bit and turn up the heat. Let it cook for a while.

Add in the parsley and serve.
