Gajar Halwat-Al-Jibn

Halwat Al Jibn is a famous middle eastern sweet. It's a kind of sweet roll made with mozzarella cheese and stuffed with sour cream or cream cheese. I made this sweet mozzarella with Indian flavor. This Gajar Halwat Al Jibn is stuffed with our most favorite Gajar ki halwa.

Halwat Al Jibn is a famous middle eastern sweet. It's a kind of sweet roll made with mozzarella cheese and stuffed with sour cream or cream cheese. I made this sweet mozzarella with Indian flavor. This Gajar Halwat Al Jibn is stuffed with our most favorite Gajar ki halwa.
Steps

For the sugar syrup heat 1 cup of sugar and 1/2 cup of water in a saucepan.

Give it a boil. Add lemon juice and kewra or Orange Blossom water.

Simmer for 10 minutes and remove from heat.

For the cheese roll heat 1/2 cup of sugar, 1/2 cup of milk and 1/2 cup of water in a pan.

When the liquid starts boiling, reduce the heat and add 2 cups of Mozzarella cheese.

Stir continuously.

Add kewra and orange blossom water and cook till cheese melts completely and the mixture becomes thick homogeneous mixture.

Next add 1 cup of fine semolina.

Mix vigorously to incorporate semolina well in the mixture.

Cook for 2 minutes in low heat until the mixture becomes a soft sticky dough.

Remove from heat.

Arrange a clean counter top spread and some prepared sugar syrup.

Transfer the prepared cheese dough to the counter top.

Take a rolling pin and brush some sugar syrup. Also spread sugar syrup to the dough. This will help to roll the sticky dough.

Roll the dough in rectangular size to become a little thick(paratha like) sheet.

Trim off sides to make the sheet rectangular or square size.

Take a cup of carrot halwa.

Take 1 tablespoon of halwa and put in one side of the sheet leaving 1 inch border like the picture below.

Now lift the sheet and roll over the filling until filling completely covers and seal the side to form a long log.

Using a sharp knife trim off the log and separate it from the rest of the sheet.

Like this make logs with remaining sheet.

Now cut the log in width or in cross section to separate each sweet.

Like this make other sweets and keep in a plate.

Keep these sweets in the refrigerator for half an hour to set properly.

At the time of serving sprinkle some sugar syrup, garnish with some halwa and crushed pistachio.
