Ingredients

Juice and rind of 1 big lime
1 tbspdijon mustard
2 tsphoney
2 tbspolive oil or any oil you prefer
Pinchsalt

Steps

Pour lime juice, grated rind, salt, mustard, oil and honey in a small jar, shake well and refrigerate

Wash and dry rocket and spinach leaves.
3

Before serving pour vinegrette, mix and serve with salmon croquettes
