Ingredients

  1. 2medium or 1 ½ cups Potatoes
  2. peeled and cubed
  3. 1 bunchor 2 cups Fenugreek leaves (methi leaves)
  4. chopped
  5. plucked, measured, washed and
  6. 2 tablespoonsOil
  7. 1/2 teaspoonCumin seeds
  8. 1Dried red chilies
  9. 1 cupOnion
  10. finely chopped
  11. 1 teaspoonGinger paste or freshly grated or crushed
  12. 1 teaspoonGarlic paste or freshly grated
  13. 1/2 teaspoonTurmeric powder
  14. 1 1/2 teaspoonRed chilli powder
  15. to tasteSalt
  16. 1 teaspoonLemon juice

Steps

  1. 1

    Heat the oil in a pan on medium heat. Once hot add cumin seeds, let them sizzle.

  2. 2

    Add dried red chilli and saute for a minute.

  3. 3

    Mix in the onions. Sprinkle some salt and cook them till they are translucent and soft.

  4. 4

    Then add ginger paste and garlic paste. Mix and cook for a minute.

  5. 5

    Add potatoes, turmeric powder, red chilli powder and remaining salt.

  6. 6

    Mix well, cover the pan and cook the potatoes.

  7. 7

    Cook them till potatoes are soft and 80% cooked. Do stir in between to make sure that it
    is not sticking to the bottom of the pan.

  8. 8

    Add chopped methi leaves. Mix well and again cover and cook.

  9. 9

    Now cook till potatoes are cooked all the way through.

  10. 10

    Finally squeeze some fresh lemon juice.

  11. 11

    Mix well and turn off the stove.
