Ingredients

30 minutes
4 serving
  • 11/2 cupwhole wheat flour
  • 1/2 cupsoya flour
  • 1 tspghee/oil
  • 1/2 tspSalt
  • 1 cupBlanched palak puree
  • For stuffing:
  • 1 cup boiled fresh/frozen green peas
  • 1 cupboiled green moong sprouts
  • 1capsicum chopped
  • 1 cupboiled potatoes mashed
  • 2spring onion chopped
  • 4-5 clovesgarlic
  • 1" ginger piece
  • 3-4green chillies
  • 1 tbspchat masala
  • 1 tspred chilli powder
  • 1 tspgaram masala powder
  • 1 tspaamchur/dry mango powder
  • to tasteSalt
  • 1 tbsptomato ketchup
  • 1 tbspcoriander leaves
  • As requiredYoghurt, sliced onion, pickle for serve

Steps

30 minutes
  1. 1

    Combine all the ingredients for dough and mix well.

  2. 2

    Knead to make soft dough using enough water.

    Cover the dough and let it rest for 15-20 minutes. While the dough is resting make the stuffing for the paratha.

  4. 4

    For stuffing:- Firstly in a blender take green peas, sprouts, ginger, garlic and green chilli blend to coursely paste.

  5. 5

    Now add in crushed paste boiled potatoes, spring onion, capsicum, and coriander leaves. Mix well.

  6. 6

    Now add all spices, salt and mix well.

  7. 7

    Take out stuffing in a bowl and set aside.

    To make the paratha take a small amount of dough and shape it round ball shape.

  9. 9

    With the help of rolling pin roll the dough into a circle.

  10. 10

    Apply 1/4 tsp of ghee/oil all over and place 2 tbsp of stuffing in centre.

  11. 11

    Gather all the edges and pinch them together forming a seal.

  12. 12

    Flatten using you fingers and roll again into a circle of 1/8 inch thickness.

  13. 13

    Place the paratha on heated tawa and cook each side with 1/2 tsp oil.

  14. 14

    Until light golden brown spots appear on both sides.

  15. 15

    Apply ghee/oil both sides and cook till paratha has brown patches all over.

    Serve hot with yoghurt, sliced onion, pickle and chutney.
