  1. For Kachori-----
  2. 2 CupsWheat Flour
  3. 2 TbspOil
  4. 1 CupUrad dal washed and soaked in water for at least an hour
  5. 1 CupMong dal washed and soaked in water for at least an hour
  6. 1Green Chilli
  7. For Filling--------
  8. 5Medium-size Potato Chopped
  9. 1/2Pumpkin Chopped
  10. 2 ClovesGarlic Grated
  11. 1 TspGinger Paste
  12. 1 TspGreen chilli Grated
  13. 2 TbspOil
  14. 1 TspCumin seeds
  15. 1/2 TspPanchphoran (sauf, kalaunji, rai, ajwain, methi)
  16. 1/4 TspAsafoetida
  17. 1/4 TspTurmeric
  18. 1/2 TspGaram Masala
  19. 2 TbspCoriander Leaves
  20. to tasteSalt

Cooking Instructions

    Drain the soaked urad, mong dal, and add green chilli grind coarsely in a grinder. In a mixing bowl, add the urad dal, mong dal paste, atta, oil, salt and using water as need, knead a firm dough. Cover it and keep aside.

    Pressure cook potato and pumpkins with salt and turmeric...upto 2 whistles. Now, heat oil in a pan, add panchphoran, hing, jeera, green chilli, ginger, garlic and sauté for a few seconds, add the potatoes and pumpkin (mashed pumpkin) with remaining boiled water, garam masala, amchur powder and mix. If needed add little more water, cover and bring to a boil. Add chopped coriander leaves and turn off the flame.

    Making Kachori, divide the dough into small balls, Roll them into thick rounds like puri.
    Heat oil in a woke and deep fry all the kachories on high heat, till the crisp and golden brown.

    Take one kachori gently make a big hole in a centre and stuff potato pumpkin curry..garnish as u want and serve hot.
