Cooking Instructions

Wash your chicken thoroughly with plenty of water, then cut it to the usual pieces and place the pieces in a saucepan for cooking. Then add some water and salt to taste. The pieces should not be fully submerged, they don’t need to be submerged in order to cook properly.Cover and cook on medium heat till tender.

While the chicken is cooking, prepare the other ingredients. Peel and chop the tomatoes and a large onion. crush the garlic and ginger.

Poke the meat with your finger or a fork, to test for softness.If it feels soft, let the water dry out and allow the meat to fry a little before adding the other ingredients.

Once it’s fried a bit, add the onions with a bit of water and stir.

Once the onions soften add in the garlic and theginger.

Add in the tomatoes and let them soften. then add the garam masala

Keep stirring till all the added ingredients soften, adding water as needed so that it doen’t dry out.

Once everything has incorporated nicely, taste for salt, and serve.

Chicken kare-kare Chicken kare-kare
Tonight's dinner of Filipino peanut stew was made by special request from my daughter. She actually asked for it yesterday, but because we already had a sushi feast ordered and on its way it had to be deferred to tonight. Normally I would've prepared beef kare-kare (short rib in particular; recipe posted previously). However, because time was short I used chicken thighs instead. Not as decadent, but so much faster. I also tried a few new techniques. First, to avoid the sauce turning runny from all the moisture in the leafy greens, I sauteed then first. Second, I also sauteed the eggplant ahead of time, to avoid them turning into mush and dissolving into the sauce. Third, I added some spices not normally used in kare-kare (and which would horrify my mother), on a hunch that they'd work. These were cumin, for extra earthy depth, and cayenne, for background heat. They worked brilliantly. The stew turned out delicious, and my little girl was happy. Perfect. Robert Gonzal -
