Cut, wash the chicken properly, put in a pot, add some salt and seasoning cubes, add chopped onions, add blended ginger and garlic, add curry powder and thyme. Mix together with a wooden spoon. Add the required quantity of water. Cover and allow to boil until chicken is tender. Drain in a basket and save the chicken stock for later use.

Boil the blended tomatoes and pepper in a pot, and drain to remove excess water. Set aside.

Pour vegetable oil in a pot, when hot, put the chopped onions, add the boiled tomatoes and pepper, stir with a wooden spoon.. Stir continuously to avoid burning. Fry the tomatoes until all moisture evaporates. Add some seasoning cubes and salt to taste, add curry powder and thyme, you can add some extra blended garlic and ginger if you like. Stir well to fully combine all the ingredients.

Pour in the chicken stock, add the boiled chicken and stir for one last time. Cover the pot and allow stew to cook for about 5mins.

Your chicken stew is ready!!! Serve with white rice or pasta. Enjoy!
