I bought this 800g piece of fresh pork loin from the butchers with the intention of slicing it into filets but in the end I decided to roast it!

I bought this 800g piece of fresh pork loin from the butchers with the intention of slicing it into filets but in the end I decided to roast it!

1: Grab the piece of pork loin and stab 4 holes in it.
2: Cut the garlic clove into 4 pieces and insert it into the holes that you made in the pork loin.
3: Sprinkle parsley and salt all over the pork loin then grab a large piece of tin foil and wrap it up.
4: Place in an oven dish and put in the oven to cook for 1 hour at 200c.
5: Cut the potatoes into large cubes and add them to a pot of water with salt to your own liking. Boil for 20 minutes then drain the water out.

6: Grab the pork loin dish from the oven and throw away the tin foil wrap. Add the potatoes to the dish. Also add over the pork loin and potatoes about 5 tbsp of olive oil and the glass of wine. Put back in the oven and cook on 200c for 30 minutes. Open the oven, take out the dish and turn the potatoes over. Put back in the oven and cook for another 30 minutes.
