Ingredients

2 or 4 as a side
  1. 1 tbspolive oil or coconut oil
  2. 1 tspcumin seeds
  3. 2 clovesgarlic, peeled and crushed
  4. 2 cmchunk of ginger, peeled and grated
  5. 1 cupred lentils, rinsed well
  6. 1 cupcarrot tops, chopped well
  7. 1/2 tspground turmeric
  8. Generous pinch of salt
  9. Generous pinch of chilli flakes
  10. 3 cupswater
  11. 1/4 tspgaram masala
  12. Juice of 1/2 lemon

Steps

  1. 1

    Heat the oil on a medium heat. Add the cumin seeds and cook for a few minutes.

    Add the garlic and ginger. Sauté for 5-10 mins.

    Add the lentils, carrot tops, turmeric, salt and chilli.

    Add the water. Bring to the boil and then simmer for 20-25 mins. 5 mins before it’s done... stir through the garam masala.

    When it’s ready, stir through the lemon juice and enjoy 😋
