If you thought a classic Spanish omelette was delicious, you'll love this stuffed version even more! Yes, stuffed!

Wash and cut the potatoes. I don't peel them, just remove any bad spots and cut them into cubes so they cook faster, but any shape is fine.

Heat a generous amount of oil in a skillet over high heat. Once it's very hot, drop in one potato piece; if it bubbles, add the rest.

Beat the eggs in a bowl, add salt and season to taste. Once the potatoes are golden, remove them onto paper towels to drain, then add them to the egg mixture and mix well.

Lightly oil the skillet you'll use for the omelette. IMPORTANT! Make sure the skillet is nonstick! Place it over medium heat and add half of the potatoes with egg.

Add the ham and cheese, then top with the remaining potatoes and egg. Cook until golden, then flip the omelette and cook the other side.
