Ingredients

8 servings
  1. 250 mlcouscous
  2. 250 mlstock, vegetable or chicken, hot
  3. 400 g (1 can)chickpeas in brine
  4. As neededoil, olive
  5. 200 gtomatoes, cherry
  6. 100 gcucumber
  7. 200 gcabbage, red
  8. 1whole chicken, roasted
  9. As neededvinegar, balsamic
  10. TT salt and pepper

Steps

  1. 1

    Add couscous and hot stock in bowl. Cover with cling wrap or lid and leave for 5-10 minutes.

  2. 2

    Drain chickpeas. Toast in 180°C oven for 5-10 minutes. Drizzle with olive oil after toasting and add to couscous.

  3. 3

    Cut tomatoes lengthwise in quarters. Add to couscous.

  4. 4

    Slice cucumber in quarters. Add to couscous.

  5. 5

    Chiffonade cabbage. Add to couscous.

  6. 6

    Shred chicken with hands or fork in small pieces. Add to couscous.

  7. 7

    Drizzle olive oil and balsamic vinegar for dressing

  8. 8

    Season with salt and pepper
