In a pan on medium heat, fry the diced pepper and finely chopped onion in a splash of olive oil for 5 minutes.

Add the spices, harissa paste, tomato paste, sugar, and minced garlic and fry another minute or so until you smell the spices.

Add the chopped tomatoes and beans, give it a good stir and leave for another minute.

Using a spoon, make some dents in the sauce for the eggs. Try to keep the yolk whole if you like your eggs poached.

Cover the pan to cook the eggs for 4-8 minutes depending on how you like your eggs.

Dress the shakshuka with the chopped coriander.
