Today, I'm sharing a bonus tip for making a special dipping sauce! I should have written this recipe right after we finished eating, when I was still excited and could have added lots of fun details. Now it's 11:28 PM, but I'm determined to put aside my books and write this recipe to remember the best moments of today: celebrating two birthdays together.
This is a truly traditional dish for our group. Even though the ingredients are simple and prepping takes a while—peeling, slicing, frying eggs, boiling meat—we always end up coming back to this dish, even if we planned to eat fried rice or dessert instead. :D
Huyen always needs a big bowl of dipping sauce, while LinhLinh barely finishes a small one. Today, we also had Xinh, our sweet and cute friend, join us.
* Note: Next time, buy less rice vermicelli and more rice noodle sheets. When we ran out of wrappers, we just ate the leftover ingredients with vermicelli. 😂

Rinse the pork, place it in a pot, add enough water to cover, and a pinch of salt. Bring to a boil. If there's a lot of foam, discard the water, rinse the pork, and refill with clean water. Boil until cooked through. I cut the pork into 4 smaller pieces to cook faster. Let cool slightly, then slice into thin strips or small pieces. (Xinh and I had to take turns slicing because it was hot!)

Fry the eggs in a large pan to make thin omelets. Add a pinch of salt. Slice into long strips.

Soak the herbs and lettuce in salted water, then rinse and drain well. Wash and peel the carrot and mango, then shred. Slice the cucumbers into long, thin pieces.

Mix lime juice, sugar, and water to make a sweet and tangy base for the dipping sauce. Add fish sauce, one spoonful at a time, until it tastes right. Add minced or thinly sliced garlic, chili, and black pepper for extra flavor. If the sauce is too mild, everyone can add more fish sauce to their own bowl.

🍓Bonus tip (from LinhLinh): You can add a little chili garlic soy sauce to your dipping sauce. It might sound odd, but it's delicious! Try a little to see if you like it.

Cut the rice vermicelli into shorter lengths for easier serving. Arrange everything on plates and dig in! I was too hungry to take many photos, but this dish is a favorite for everyone.

For the mango, choose a crisp, fragrant variety that's not too sour. If it's too tart, you can toss the leftover mango with sugar for a tasty treat. I posted a few photos—who knows what we'll be eating a year from now, when we're all busy with internships!
