Old-fashioned recipes like this one take us back to our grandmothers’ kitchens. There are many ways to make it, but this is my favorite. Even though it has chorizo, it’s not heavy at all.

Finely chop the half onion and slice the garlic cloves. Cut the chorizo into bite-sized pieces.

Pour a little oil into a pot and sauté the onion and garlic.

When they start to soften, add the chorizo and the teaspoon of sweet paprika.

Once they begin to brown, add the grated tomato.

After about 10 minutes, when the vegetables are soft and everything is fully cooked, add just over 2 1/2 cups water (600 ml) and a pinch of salt.

Cover and simmer over medium heat for 30 minutes without letting it come to a full boil.

After that time, taste and adjust the salt if needed, then add the bread and the egg.

Stir for a few minutes, and it’s ready to serve.
