No added sugar banana cake

This is a second attempt at a banana bread that is completely free from refined sugar. The ripe bananas obviously bring their own sweetness but, if that's not quite enough for you, you could add a quarter of a teaspoon of stevia (personally I don't think it needs it).
This recipe is almost a replica of Nadia Lim's and its absolutely lovely. It gives me my sweet treat when I need it but stops me from heading for something less healthy. Added bonus that it's completely gluten free (and dairy free if you don't count eggs as dairy!!!) You can swap out the almond flour (its seriously pricey) for something else including wholemeal flour which works really well here.

Put all dry ingredients into a large bowl and mix well.

Add the bananas, oil, eggs and vanilla and mix well until completely incorporated.

Pour into a lined loaf tin and cook for approximately 50 minutes at 180˚c. Check after 40 minutes - if it looks like it is catching, cover loosely with foil for the last 10 minutes.

Remove from oven and let cool for 5 minutes before removing from the tin. Great on its own but also nice spread with a little butter!
