Finely chop the onion, carrot, and celery. Sauté them in olive oil and butter over low heat.

Add the ground meat. Brown it, then add the bay leaf and deglaze with the Chianti wine.

Once the wine has evaporated, add the tomato paste dissolved in 1/2 cup of hot water. Season with salt.

Simmer over very low heat for two hours.

In a pot, cook the prepared gnocchi. When done, top generously with grated Grana Padano cheese.
