Ingredients

1 cancoconut milk
2 Tginger (chopped)
1jalapeño (seeded and chopped)
3 clovesgarlic
2lime
3/4 tcurry powder
Pinchcinnamon
10 stemsfresh cilantro plus 10 more stems for cooking
1/4large red pepper (sliced)
1/2sweet onion (sliced)
2 lbschicken cutlets seasoned with Garlic powder, Adobo, Pepper, and Sazon
For a salad:
1large tomato (small diced)
1jalapeño (seeded and minced)
1/2red onion (small diced)
3/4large red pepper (small diced)
Handfulcilantro
1lime (juiced)
to tastegarlic salt
to tastepepper

Steps

Add first 8 ingredients to blender (save some cilantro for cooking), blend until well blended

Add all ingredients into crockpot (slow cooker). Cook for 4 hours or until tender

For the salad combine all ingredients mix well.
