Ingredients

  1. 1 tablespoonoil
  2. 2onions finely chopped
  3. 2fresh red cheers seeded and finely chopped
  4. 1garlic clove crushed
  5. 2.5 cmpiece of fresh root ginger grated
  6. 1 teaspoondried thyme 1 teaspoon ground allspice
  7. 1 teaspoonhot pepper sauce
  8. 2 tablespoonsrum
  9. grated rind and juice of one lime
  10. to tastesalt and ground black pepper

  1. 1

    Heat the oil in a frying pan and add the onions and cook the 10 minutes until soft

  2. 2

    Add the chilli is, garlic, ginger, time and allspice and fry for 2 more minutes

  3. 3

    Stir in the hot pepper sauce, run, lime rind and juice

  4. 4

    Simmer until the mixture forms a dark paste. Season with salt and pepper and leave to cool

  5. 5

    Store any unused spice in a container for future use for a barbecue or baking. Increase the ingredients if you wish to make a larger stock
