Ingredients

Serves 4 servings
  1. 7 ozfish cake (such as Nha Trang-style fish cake) (about 200 grams)
  2. 1/4ripe pineapple
  3. 1/2tomato
  4. 2scallions
  5. 3green and red chili peppers
  6. 2 tablespoonsfish sauce (or soy sauce) (30 ml)
  7. 1 teaspoonpalm sugar
  8. 1/4 teaspoonblack pepper
  9. 1bird’s eye chili
  10. 1 tablespoonwater (15 ml)
  11. 2scallion stalks

    Slice the pineapple and cut the fish cake into bite-sized pieces.

    Heat a skillet over medium heat and add a little cooking oil. Sear the pineapple slices until lightly browned and fragrant. Add the fish cake, then add the seasonings. Bring to a boil, then reduce the heat and simmer until the flavors are absorbed and the sauce is almost gone.

    Transfer to a plate and sprinkle with chopped scallions.
