7 ozfish cake (such as Nha Trang-style fish cake) (about 200 grams)
1/4ripe pineapple
1/2tomato
2scallions
3green and red chili peppers
2 tablespoonsfish sauce (or soy sauce) (30 ml)
1 teaspoonpalm sugar
1/4 teaspoonblack pepper
1bird’s eye chili
1 tablespoonwater (15 ml)
2scallion stalks

Slice the pineapple and cut the fish cake into bite-sized pieces.

Heat a skillet over medium heat and add a little cooking oil. Sear the pineapple slices until lightly browned and fragrant. Add the fish cake, then add the seasonings. Bring to a boil, then reduce the heat and simmer until the flavors are absorbed and the sauce is almost gone.

Transfer to a plate and sprinkle with chopped scallions.
