Make the pastry dough with the flour, butter and egg plus some cold water.

Roll out as thinly as possible

Line the baking tin
- 4
Trim the edges and press against the tin, so that pastry sits slightly above the tin.

Prick base with a fork and chill for about 10 minutes.

Line the base with foil, fill with beans, to avoid air bubbles, and bake for 15 minutes.

Remove foil and bake for a further 5 minutes.

Meanwhile prepare the fillings, fry the mini bites,chop the omelet, grate cheese, chop onions, mix the beaten eggs with milk

Pour everything in to the base

Bake at about 180°c for about 25 mins. It should be golden and softly set not too firm to touch.

Let it set for about 5 minutes in the tin.

Serve freshly baked or cold. I served with tomato salad.
