Ingredients

4 servings
  1. 1 cupIngredie brown basmati rice
  2. 1/2 tspoil
  3. 1/2 tspsalt
  4. 5 cupswater
  5. Ingredients for the Pulao
  6. 2 tbspghee
  7. 1bayleaf
  8. 1" stick cinnamon
  9. 3 podsgreen cardamom
  10. 1star anise
  11. 1/2 tspfennel/ sauf seeds
  12. 1 tspjeera
  13. 1onion, finely chopped
  14. 1/4 cupcurds
  15. 200 gmspaneer cubes, browned in 1 tsp ghee
  16. 1 tspginger - garlic paste
  17. 2green chillies, slit
  18. 1/4 tspTurmeric powder (haldi)
  19. 1tomato, finely chopped
  20. 1/2 tspKashmiri red chilli powder
  21. 1 tspShahi biryani masala
  22. 1 tspsalt
  23. 2 tbspmint, finely chopped
  24. 2 tbspcoriander, finely chopped
  25. 1 tbspfinely chopping coriander leaves for garnishing

Steps

  1. 1

    For cooking the Brown Rice

    Heat 5 cups of water in a vessel, once the water comes to boil, add the salt, oil and soaked brown rice and cook them on medium flame till 90% cooked for 10-12 minutes.

    Remove the cooked rice from water and keep aside.Tip : Make sure you do not overcook the rice

    How to proceed
    Heat ghee in a non stick pan and add the whole spices, saute for 2 minutes on medium flame

  3. 3

    Add the chopped onions, ginger-garlic paste, green chillies & saute till they onions turn translucent.

  4. 4

    Add the chopped tomato & saute till the tomatoes turns soft & mushy
    Add the turmeric powder, chilli powder, biryani masala and salt. Mix well and cook on slow flame for 2 minutes.

    Add 1/4 cup water & let the spices cook.
    Add whisked curds and saute till the curds combines well in the mixture.

    Add mint leaves, coriander leaves, browned paneer and mix well.

  7. 7

    Spread the cooked rice evenly on top of the gravy, cover & let it simmer for 5 minutes on slow flame so that the ricr will soak in all the flavours.

    Serve hot with mixed vegetable raita.
