Masala Egg Fry is a quick & easy Starter or Appetizer from Malabar. Saunf & Coconut Oil are the main flavour makers. It hardly takes 2 minutes to make it (if you have boiled eggs at hand). If you have some unexpected guests, you can make this quickly. This simple Masala Egg Fry will grab all the attention.

Boil the eggs. Deshell and cut into two halves and set aside.

Heat coconut oil in a kadai or pan. Add saunf. Once it splutters, add garlic, green chillies and curry leaves (all crushed). Stir fry for a minute.

Add in chilli powder, turmeric powder, coriander powder, garam masala and salt. Mix it well.

Place the eggs gently over the masala with the cut side down. Apply light pressure with your fingers so that the eggs get coated with the masala. After about a minute, gently turn the eggs to the other side, so that it gets coated with the masala. After about a few seconds, sprinkle a pinch of pepper powder over the eggs. Serve Masala Egg Fry hot and enjoy it's drooling taste.
