Chop the onion and sauté it in a saucepan with a little oil.

Add the ground beef and brown it.

Add the tomatoes and cook.

Add the beans, drained and rinsed, and cook for a few minutes.

Add the cumin, coriander, cayenne, and salt. Stir and cook for a few more minutes, then set aside.

For the guacamole, peel and pit the avocados, place them in a bowl with the lime or lemon juice, and mash with a fork.

Finely chop the red onion and add it to the avocado.

To assemble, spread tortilla chips on individual plates and sprinkle shredded cheddar cheese on top.

Microwave for a few seconds to melt the cheese.

Once the cheese is melted, if desired, add some pickled jalapeños on top. Otherwise, cover the chips with the beef and bean mixture.

Add a spoonful of guacamole on top, and finish with a little sour cream or Greek yogurt.
