Cooking Instructions

Put the water in a small pot with a pinch of salt. Rinse the couscous in cold water. Set aside. While the water comes to a boil, prepare the ingredients: peel the onion and tomatoes and chop them into very small pieces. Set aside. If the water has come to a boil, add the couscous, stir, remove from heat, and let it absorb the water for a few minutes.

Continue preparing the ingredients. Rinse the radishes and chop them into small pieces. Set aside. Remove the leaves from the parsley, cilantro, and mint and chop them. Set aside. When the couscous is dry, add the butter and mix well. Cut the pomegranate in half and remove the seeds. Set them aside. Now all the ingredients are prepared and the couscous is ready.

Assemble the salad: in a large bowl, place the onion, tomato, and radishes. Squeeze the two lemons and add the juice to the bowl. Mix. Add the olive oil, raisins, salt, and pepper and stir everything together.

Before adding the couscous, stir it to loosen the grains, then add it to the bowl along with the pomegranate seeds, parsley, cilantro, and mint. Mix again, check the seasoning of salt, pepper, and oil. Adjust if necessary and serve. I hope you enjoy it.
