Steps

Firstly, take wheat flour, salt and oil in a mixing bowl. Mix it well.

Knead a soft dough by adding water. Let it rest for 10 minutes.

Now heat oil in a pan on low medium flame.

Add cumin seeds and fennel seeds, let it crackle.

Add in a grated ginger, green chillies and asafoetida. Saute for few seconds.

Add coriander powder, turmeric powder, red chilli powder and garam masala powder. Saute for few seconds.

Furthermore add in the grated cauliflower. Mix well and saute for 2-3 minutes on low medium flame.

Lastly add dry mango powder, salt and coriander. Mix well and keep aside.

Now take a small portion of the dough and make lemon sized ball. Coat it with dry wheat flour, roll it into a thick poori. Place 1 1/2-2 tbsp stuffing in the center.

Now close it by bringing all the edges of the poori towards top, seal them and make a round ball again.

Now coat it with dry wheat flour and roll it into a slightly thick paratha.

Heat a tawa on low medium flame, place rolled paratha on it and let it cook for few seconds.

Flip the paratha and again cook it for few seconds or until golden brown from both the sides.

Apply oil or ghee on both the sides of paratha. Cook for few more seconds.

Transfer it to a plate. Make more parathas likewise with the remaining dough and stuffing.

Serve them hot with your choice of chutney, pickle, plain yoghurt or delicious raita.
