Ingredients

  • 1 handfulmugwort leaves
  • 2-3chicken eggs
  • 1 tablespoonfish sauce
  • Pepper, seasoning powder
  • 1 tablespoonwater or milk
  • 1 tablespoonsesame oil
  • 1 tablespooncooking oil

Steps

    These mugwort leaves were brought from my wife's hometown to Saigon. Wash them thoroughly, shake off excess water, and chop them very finely, as the elders say, like tobacco strands. (If you can't chop them finely, it's okay)

    Take a large bowl, rinse it with water to prevent the eggs from sticking. Mix the chopped mugwort leaves, seasonings, and 1 tablespoon of sesame oil into the bowl. Beat everything well; the fluffier, the better. Fluffy eggs will be airy and not dry when fried.

    Use a thick-bottomed, non-stick pan. Heat the oil, then pour all the egg and mugwort mixture into the pan. Cook over medium heat, cover to keep the eggs from drying out. Flip to cook the other side, then turn off the heat but keep the lid on for a few more minutes. Serve hot with a bit of fish sauce with garlic and chili for dipping.
