If you have never tried Gazpacho before, don't let the fact that is a cold dish put you off it really is delicious and the fine herbs in this recipe make an extremely tasty.

Put about one quarter of all the fresh vegetables aside except for the green chilli, then place all the remaining ingredients into a food processor and season to taste. Process finely and chill in the refrigerator

Chopped all the remaining vegetables and serve in separate bowls sprinkle over the soup.

Crushed some ice cubes an and to the centre of each bowl then garnish with fresh herbs

Serve with crusty bread rolls, or sliced crusty French bread
