Ingredients

  1. 1.2 KGripe tomatoes
  2. 225 gonions
  3. 2green peppers
  4. 1green chilli
  5. 1large cucumber
  6. 2 tablespoonsred wine vinegar
  7. 1 tablespoonbalsamic vinegar
  8. 2 tablespoonsolive oil
  9. 1 clovegarlic crushed
  10. 300 mLtomato juice
  11. 2 tablespoonstomato purée
  12. to tastesalt and pepper
  13. 2 tablespoonsfinely chopped mixed fresh herbs plus extra for garnish in

Steps

  1. 1

    Put about one quarter of all the fresh vegetables aside except for the green chilli, then place all the remaining ingredients into a food processor and season to taste. Process finely and chill in the refrigerator

  2. 2

    Chopped all the remaining vegetables and serve in separate bowls sprinkle over the soup.

  3. 3

    Crushed some ice cubes an and to the centre of each bowl then garnish with fresh herbs

  4. 4

    Serve with crusty bread rolls, or sliced crusty French bread
