Ingredients

  1. 4medium chicken breast boned and skinned
  2. 225 gsugar peas/snow peas
  3. 2 headsthe decorative lettuce such as low Lollo Rosso
  4. 3carats peeled and cut into small matchsticks
  5. hundred and 75 g button mushrooms sliced
  6. 6 rashersbacon fried and chopped
  7. Dressing
  8. 115 mLlemon juice
  9. 2 tablespoonswholegrain mustard
  10. 250 mLolive oil
  11. 65 mLsesame oil
  12. 1 teaspooncoriander seeds crushed
  13. 1 tablespoonfresh coriander leaves chopped use for garnish

Cooking Instructions

    Mix all the dressing ingredients in a bowl

    Place the chicken breast in a shallow dish, and pour on half the dressing.

    Refrigerate overnight and put the balance of the dressing in the fridge until required

  4. 4

    Cook the snow peas for 2 minutes in boiling water, thank all under running cold water to stop them cooking any further.

    Ted the lettuce leaves into small pieces mix all the other salad ingredients and the bacon together.

    Arrange all these in individual serving dishes

    Grilled the chicken breast until cooked through, then slice them diagonally into fairly thin pieces

  8. 8

    Divide between the bowls of salad and add some dressing to each dish

  9. 9

    Combine quickly and scatter some fresh coriander over each bowl
