Add salt, cayenne, onion and water. Stir, cover and let simmer on low heat for 20 minutes or until water has reduced. You want to achieve a thick consistency on your stew

Add coconut milk, stir, cover, turn of heat and let rest for 5 to 10 minutes before serving.

Enjoy with chapati or white rice!
