Cut chicken into parts and wash put in colanda and allow water to drain, add chicken to a pot and season with salt, thyme, curry, seasoning cubes, 1 onions and some dry ginger place on heat and cover allow to cook for 20 minutes or until tender, no need to add water the chicken produce enough water while cooking.

Wash scotch bonnet, onions, garlic, sweet peppers and grate or blend to a coarse texture and set aside

Place frying pan on heat allow to get hot and fry chicken parts until golden brown, remove fried chicken and set aside add in grated peppers and onions fry on medium heat for 5 minutes add in fried chicken parts to pepper mixture, add some slice onions, soysauce and stir very well until well incorporated simmer for a minute and serve with dish of choice.
