Ingredients

Serves 4 servings
  • 1.1 lbsbeef steak, finely chopped (about 500 grams)
  • 9 ozsmoked bacon, chopped into small pieces (about 250 grams)
  • 10tomatoes
  • 3serrano peppers
  • 5whole cumin seeds
  • 1small garlic clove
  • cooked pinto beans (frijoles de la olla)
  • oil
  • salt
  • 10green onions (cambray onions)
  • 1 bunchcilantro, chopped
  • 1onion, diced
  • chopped serrano peppers
  • limes
  • sliced radishes (optional)
  • avocado (optional)

Steps

  1. 1

    In a hot pot, add a little oil and brown the bacon. Remove and set aside.

  2. 2

    In the same pot, fry the chopped beef. Add the bacon back in.

  3. 3

    In a small pot, add 2 cups of water (about 480 ml) and cook the tomatoes and serrano peppers. As soon as the tomatoes start to change color, turn off the heat.

  4. 4

    Blend the tomatoes, peppers, cooking water, a few sprigs of cilantro, cumin seeds, and garlic clove until smooth.

  5. 5

    Pour the blended mixture into the pot with the meat, add 1 more cup of water (about 240 ml), a little salt, and let it simmer for 25 minutes.

  6. 6

    Separately, brown the green onions and add them to the pot. Cook for 5 more minutes.

  7. 7

    Serve hot with cooked pinto beans, diced onion, chopped cilantro, chopped serrano peppers, and a squeeze of lime.
