Fruit Cocktail Dessert

Back in the day when I was studying in Da Nang, I used to eat this a lot. After school, I would head straight to the shop for a 2k fruit dessert. Today, I found some leftover homegrown jackfruit in the fridge, some off-season strawberries freshly picked in Da Lat, newly bought candied gooseberries, and a packet of agar powder. So, I decided to make this dish again. It's been over 20 years already.

Steps

  1. 1

Add the rock sugar to a pot with about 2 cups of water, simmer until the sugar is completely dissolved. Let it cool.

  2. 2

Slice the jackfruit into strips. Remove the stems from the strawberries, and if they are large, cut them in half. If you have longans or lychees, cut them in half and add them too. Mix the rock sugar with the strawberries and jackfruit, and refrigerate if not eating immediately. Sometimes I replace jackfruit with pineapple cooked in sugar.

  3. 3

Add 5 grams of agar powder to 2 cups (500ml) of water, cook over medium heat, stirring constantly until the water boils and the powder is completely dissolved. Pour into a bowl, let it cool and set, then cut into small cubes. If you buy ready-made black jelly from the supermarket, just cut it and eat without cooking.

  4. 4

Alright, let's get started: put ice in a glass, add the agar jelly, then the fruit, strawberry jam, drizzle a few spoons of rock sugar syrup as desired, and finally sprinkle dried coconut and a few candied gooseberries on top. Back in the day, the dessert seller would also add a bit of syrup from a bottle, making it sweet and fragrant. Mix well and enjoy!
