Prepare the ingredients: 2.2 lbs beef short ribs, 10 cloves garlic, 1 leek with roots, cleaned and cut into 2-3 inch pieces, 1/2 onion, 1.1 lbs radish, 1/2 teaspoon pepper, 6 jujubes, 1 tablespoon salt, 3 slices ginger.

Soak the glass noodles in a bowl of water until they soften.

Soak the beef bones in a bowl of water for 30 minutes to 1 hour to remove excess blood.

After soaking, boil the bones in a pot of water for 2 minutes, then drain and rinse each bone under running water to clean.

Place all the prepared ingredients along with the bones and 3 quarts of water in a pot. Simmer until the bones are tender.

Remove the bones from the pot and let them cool. Trim off any excess fat from the meat.

Remove the radish from the pot, let it cool, and cut into bite-sized pieces.

Strain all the ingredients from the pot and discard them.

Return the beef bones and radish to the broth, season with salt to taste, and bring the broth back to a boil.

Add the glass noodles and cook until done, then add the garlic and chopped leek before turning off the heat.
