Ingredients

  1. 1 lbground turkey
  2. 2 clovesgarlic
  3. 3/4 cketchup
  4. 1/2 cwater
  5. 1 Tbsbrown sugar
  6. 3 tspchili powder
  7. 1 tspdry mustard
  8. 1 tbstomato paste
  9. dashWorcestershire sauce
  10. dashtabasco
  11. 1yellow onion, thinly sliced
  12. 1green pepper, thinly sliced
  13. 3 tbsEVOO
  14. 1 cshredded cheddar
  15. 1 cshredded mozzarella
  16. 2 cupstortilla chips
  17. 2 cupsblue corn tortilla chips
  18. to tastesalt & pepper

Steps

    Preheat skillet to medium high heat. Preheat broiler.

  2. 2

    Add 2 tbs EVOO, ground turkey, garlic, salt & pepper to skillet. Saute until turkey is no longer pink about 5-7 min.

    Add the ketchup, water, brown sugar, chili powder, dry mustard, tomatoes paste, Worcestershire and Tabasco sauce.

    Stir to combine and bring to a simmer.

  5. 5

    Simmer for about 5 min. until slightly thickened. Remove from heat.

  6. 6

    In another skillet preheated to medium high heat, add the remaining tablespoon of EVOO, yellow onion, green pepper, salt & pepper.

    Saute veggies until soft about 5 min. Remove from heat and set aside.

    On a baking sheet, place 1 cup of the tortilla chips and 1 cup of the blue tortilla chips spread around.Top with half of the sloppy joe mixture followed by 1/2 c of each of mozzarella and cheddar cheeses.Repeat step with the remaining chips, sloppy joe and cheeses. Top with veggie mix.

    Place baking sheet under the broiler for about 5 minutes or until the cheese has melted. Remove from broiler and dive in!
